Questions about bakery

Durango bakeries run from French-style bread counters to custom cake studios. The useful question is what you're ordering: a daily loaf, a box for the office, or a cake with a date attached. Bread is a walk-in errand. A wedding cake is a booking.

Why does baking work differently at Durango's elevation?

Anyone who has baked here knows the sea-level recipe is a suggestion. CSU Extension says cakes above 3,000 feet tend to rise too fast and can fall, and that bakers should cut leavening and raise the oven temperature by 15 to 25 degrees (CSU Extension). Durango, at roughly 6,500 feet, is well past that line.

Water boils cooler here too, between 203 degrees at 5,000 feet and 198 at 7,500, so a bakery that has tuned its recipes to the altitude sells you more than flour and butter. If your own cake sinks, that isn't your fault. Our elevation answer shows how much Durango's height changes across town.

Is every bakery licensed the same way?

No. A storefront bakery needs a State of Colorado Retail Food Establishment License, and La Plata County Public Health inspects it before it opens (La Plata County). The county also lets you search restaurant inspection reports. It warns that one inspection doesn't show a kitchen's long-term habits.

Home bakers fall under another law. Colorado's Cottage Foods Act covers only "nonpotentially hazardous" foods made in a home kitchen. Those products must carry a label saying the kitchen isn't licensed or inspected (C.R.S. 25-4-1614). A cake with a perishable filling is worth a question: where was it made?

When should you order?

Early, for anything with a date on it. Ask how much notice the bakery wants for cakes, how it handles allergies, and whether it delivers or you carry the box yourself. Summer weekends and wedding season are the crunch.
